Country clubs are a unique setting in the world of professional cooking. Many clubs require a monthly fee for membership. In the finer private clubs, members pay a quarterly food and beverage minimum, whether they eat at the club or dine elsewhere. But the cooks we know who work in this setting want to be cooking!
